Raw and Natural

Our honey is 100% unblended. What this means to you is that this is a pure honey that has come from the hives to the jar with as little processing as possible.
All the honey produced is not pasteurised, keeping as what is widely known as Raw. This is to help preserve the high levels of antioxidants and natural enzymes present in honey. To extract the honey from our frames we use uncap the frames, place these in an extractor which spins the frames to release the honey. this honey is then placed into a settling tank wher ethe wax floats to the top and we jar from the bottom.  We dont use heat in the extraction process at all.
All pure honey should crystallise over time depending upon the make up of the honey, this can happen in a matter of weeks or months. As this is predominately controlled by temperature, try to keep your honey somewhere above 15 degrees Celsius.   
 

Raw Soft Set Honey

This is the first honey produced from the bees in the UK season that we harvest. The honey is mainly from the bright Yellow fields of Oil Seed Rape. This is the bee equivalent of a fast food restaurant, the flowers on the rape seed plant have a high amount of pollen and if the weather(temperature) is right the nectar flows readily. This honey has a loverly delicate taste but the one draw back is that it sets hard in the jar. To solve this problem we take this honey and cream it. This means that we have change the structure of the honey to make it into a texture similar to peanut butter. Easily spread and stays the same from the day you buy it to the day its all gone....

Raw English Blossom Honey

This honey is produced from North Yorkshire County Durham and Northumberland's wildflower meadows and farmland. This Pure honey has a floral scent, smooth texture and is full of natural goodness.

This Wildflower honey won a Great Taste One Gold Star been described as having a 'virtually flawless taste'
Our Early summer honey, this has a subtle blend of delicate floral notes and rich sweetness. The bees forage on a mix of wildflowers, hedgerows, farm-crops and trees. The flavour and composition of this honey varies batch to batch as the different locations of the hives produce different flavours depending upon what the bees have foraged upon.

Raw Heather Honey

The final crop of the year comes from heather. We move the hives up to the moorlands of North Yorkshire, County Durham and Northumberland to take advantage of the swathes of brilliant purple and pink flowers of the Ling heather. 
The weather plays a huge part in the bees been able to collect the nectar and pollen from the heather. If the weather is wet and cold production of the heather honey is made very difficult, if not impossible for the bees. ​
 Heather honey is naturally gelatinous meaning that it wouldn't come out of the natural honey comb the bees put it in without the agitator. This simply loosens it, allowing it to flow. the same may be required in the jar. Simply stir slightly to produce a 'more runny' honey. 
the flavour of heather could be described as a naturally rich caramel taste and with a lovely texture.
